Cashew nut cookies

Cashew nut cookies are very tasty, but you don't see them very often.

These biscuits are simple, cute and so made… this buskuchi di cashupete have their roots in China. They are mainly eaten there at New Year's (now!) But because of their taste they also fit perfectly in the Antillean kitchen. No time for a whole bolo di cashupete, but do you like the taste? These cashew nut cookies are a real godsend!



INGREDIENTS:

  • 200 gr butter
  • 100 gr icing sugar
  • 1 egg yolk
  • A cap of vanilla essence
  • 250 gr wheat flour
  • 60 g cornflour
  • 200 gr ground cashew nuts
  • 1 egg, beaten (to spread)
  • A few extra cashew nuts for decoration

COOKING CASHEW NUTS:

First sieve all dry ingredients together and set them aside.

Beat the butter with the icing sugar until it is fluffy.

Now add the egg yolk and vanilla essence and mix it well.

Then mix the dry ingredients with the butter mixture into a dough. Cool the dough for at least 30 minutes.



Meanwhile, preheat the oven to 175 degrees.

Then take the dough out of the refrigerator and roll into balls, the size of a walnut.

Now place this on a baking tray lined with baking paper.

Then spread the balls with a little bit of the beaten egg and push half a cashew nut in each ball.



Finally, bake the cookies for 15 minutes and golden brown.

Enjoy!

TIP: The cookies can be stored for about 5 days in a tightly closed box.
