bolo di pudin i plumu – cake with pudding & plums

This Antillean 'bolo di pudin i plumu' actually combines two existing recipes. That of pie with pudding and that of pie with a homemade plum filling.

Fill or mix

When making the plum pie, we sometimes choose to mix the plum filling into the batter instead of filling the pie with it. That is also very tasty and it is ready a lot faster. In this recipe, we keep the plum filling aside and spread it between the different layers of cake as a 'jam'.



INGREDIENTS:

For the plum filling:

  • 500 gr pitted prunes
  • 100 gr sugar
  • 1/2 tsp cinnamon
  • 50 ml rum
  • 100 ml water
  • the juice of 1/2 lemon

For the pudding:

  • 750 ml milk
  • 80 g custard powder
  • 100 gr sugar
  • a cap of almond essence

PREPARATION BOLO DI PUDIN & PRUIMU:

  1. Start making the cake. You do this according to our recipe bolo di manteka.
  2. When the cake has cooled, you can cut it in three layers.
  3. Now make the plum filling first.
  4. Then check the plums for any pips, even if the bag says they are seedless (!)
  5. Now mix the plums with the water in a blender and grind them finely. This can also be done in a food processor or with a hand blender.
  6. Then put the plum mixture in a pan and add the sugar, cinnamon and lemon juice.
  7. Now heat the pan and let the mixture boil for a while, until the sugar crystals are dissolved.
  8. You now have a very thick jam. Let it cool for about 5 minutes and then add the rum.
  9. Stir well and the plum filling is ready.

PREPARATION OF THE PUDDING:

  1. To make the pudding, heat the milk in a saucepan – but reserve 3 tablespoons of milk.
  2. Then mix the 3 tablespoons of milk with the custard powder to a smooth paste.
  3. Now pour this into the pan with the milk and also add the sugar and almond essence.
  4. Now let the milk boil. The mixture will then thicken immediately.
  5. Now let the pudding cool with a layer of plastic on top. The plastic wrap may touch the pudding. This prevents a sheet from getting on the pudding.

COMPOSITION OF THE CAKE:

  1. When both the plum filling and the pudding have cooled completely, you can start putting the pie together.
  2. Now take the bottom layer of cake and spread a little bit of plum filling on it.
  3. Then place a few large spoons of pudding on it and spread it carefully with a spatula.
  4. Then place the second layer of cake on the pudding and repeat the above.
  5. When you have placed the last layer of cake, you no longer apply plum filling, but only pudding.
  6. Finally, make the 'bolo di pudin' by brushing the top and sides with the pudding.

Enjoy!

TIP: You can use the 'bolo di pudin' CANNOT decorate with candies or sugar pearls. Due to the moisture in the pudding, these will break or the color will run out!
