Shrimp salad with feta cheese and balsamic dressing

In the summer there are few things as tasty as a fresh salad. Besides, as an appetizer, it tastes great any day of the year. Take, for example, this delicious shrimp salad with feta cheese and balsamic dressing.

It's best to serve the shrimp salad in an 'edible tray' made from a fried tortilla. You can make those tortillas yourself (make dough from flour, water and salt, roll it out thinly and bake them in a dry pan) or buy them in the store. Just what you prefer.



This recipe is for 4 people with hunger or 6 appetizers.

INGREDIENTS:

  • 400 gr precooked shrimps
  • 200 gr cherry tomatoes
  • 1 red peppers
  • 100 gr red oak leaf lettuce
  • a bunch of flat parsley
  • 1 / 2 red onion
  • 1 block (200 gr) of feta cheese
  • 3 tablespoons olive oil
  • 1 tablespoon of balsamic vinegar *
  • 1/2 tsp salt (to taste)
  • the juice of 1/2 lemon
  • 4 – 6 tortillas

* Don't feel like buying balsamic vinegar for 1 recipe? Then use white wine vinegar or apple vinegar.

PREPARATION SHRIMP SALAD:

First make the tortillas. You do this by preheating the oven to 180 degrees. Then place soup bowls upside down on a baking tray and lightly fold the tortillas over it. Bake the tortillas in this way until they turn golden brown.

Let the 'trays' cool down. They will now become a bit harder and crispy.



Now start cutting the vegetables: the cherry tomatoes can be cut in half, the onion chopped very finely and the bell pepper in thin strips. Then tear the oak leaf lettuce into pieces (after the lettuce has been washed). Also chop the bunch of parsley.

Cut the feta cheese into cubes and mix it with the shrimps, the vegetables and the parsley.

Finally, make the dressing by mixing olive oil, balsamic vinegar, lemon juice and salt to taste. Whisk the ingredients together (with a fork or whisk) to create a thick 'sauce'.

Tip: Make the dressing at the last minute! Oil and vinegar will never really mix, so these ingredients will separate over time.



Pour the sauce over the shrimp salad and mix well. Serve the salad in the tortilla trays.
