funchi hasá – Cornmeal fries

Funchi hasá are a type of 'fries' made from corn flour. And as we all know: baked funchi is simply delicious! Normally this is made with leftovers of funchi from the previous day, but the (side) dish is so tasty that it is often made directly this way nowadays.

Note that you must have cooled funchi for this preparation. This is much firmer than funchi that is still warm. So it is best to cook the funchi a few hours in advance. This recipe is for 4 servings.



INGREDIENTS:

  • 3 cups of yellow corn flour (harina PAN)
  • 6 cups of water
  • 50 gr butter
  • 1 teaspoon salt
  • oil, for baking
  • 50 gr grated (aged) cheese
  • a pinch of dried rosemary or 2 teaspoons of rosemary needles, chopped

PREPARATION FUNCHI HASÁ:

Bring the water to the boil along with the salt and butter. Then add the cups of corn flour and stir well (with a whisk).

Then keep stirring for a few minutes to avoid lumps. Now cook the funchi over very low heat for about 15 minutes.

Then take a large plate and moisten it a bit. Then deposit the funchi on the plate and press another plate on the funchi to make a flat disk. Let the funchi cool and set for a few hours. Finally cut the funchi into slices and then into strips.

Heat a layer of oil in a frying pan and fry the strips of funchi in it until they turn golden brown. Sprinkle the freshly baked funchi strips with grated cheese and rosemary.



TIP: the funchi hasá becomes extra crispy when you first roll the slices through the raw corn flour!
