flancocho – Flan with chocolate cake

Flancocho is an ideal recipe for those who cannot choose: would you rather eat kesio or chocolate cake? With this recipe you don't have to choose… you bake both in one mold, making a great two-layer dessert. And it also looks beautiful!

We owe the flancocho to the Portuguese influences that are still very much present in the Antilles.



Ingredients:

  • 300gr. sugar, for the caramel.
  • 100gr. butter, at room temperature
  • 150gr. sugar
  • 1 egg
  • 175gr. flower
  • 1 teaspoon baking powder
  • 3 tablespoons of cocoa powder
  • 150ml. buttermilk
  • a pinch of salt

For the flan:

  • 1 can of condensed milk with sugar (400ml.)
  • 400ml. Full Milk
  • 5 eggs
  • 100gr. cream cheese
  • 1 cap of vanilla essence

Preparation flancocho:

Grease a turban tin with butter and preheat the oven to 180 degrees.



Put the sugar in a saucepan and heat it until all the sugar is dissolved and a thick, dark brown caramel is formed.

Pour the caramel into the turban and make sure that the bottom is well covered.

Take a bowl and beat the butter with the sugar in it until you get a creamy whole. Beat in 1 egg.

Sift the flour, baking powder, salt and cocoa powder into another bowl. Now carefully mix the flour and buttermilk into the butter until a smooth batter is formed.



Mix the condensed milk, whole milk, cream cheese, eggs and vanilla in a blender.

Pour the mixture into the turban for the flan.

Now carefully scoop the cake batter on top. Do not mix!!!

Close the mold tightly with aluminum foil and place it in a larger bowl filled with water.

Bake the flancocho (au bain marie) in about 90 minutes, or until one satéprick comes out clean.

Let the flancocho cool for about an hour and then turn the mold over onto a plate.



Place the flancocho in the refrigerator for at least 3 hours. Enjoy your meal!
