empana di karni – gluten-free pasties

Our empana di karni are tasty, gluten-free pasties made from cornmeal. They are filled with seasoned minced meat. In almost all of Latin America, some kind of empana / empanadas is eaten.

The Antillean version has its roots in Venezuela. This snack is different from the other versions because it is used funchi (corn flour). This gives the Antillean empana its characteristic yellow color and distinct texture. This is good news for people with a gluten allergy: the Antillean empanas are completely gluten-free!



We now fill our empana with minced meat, but almost any other filling is also possible! You can think of slices of cheese, prepared tuna or cod… or even baked vegetables!

Ingredients:

The dough of this snack should be made with maize flour from the brand Harina PAN – this Venezuelan brand is the only brand of maize flour that has already been steamed. This is a very important detail: you cannot make dough with raw maize flour (eg from an Italian brand)!

When you use raw corn meal, the water will never be absorbed. So it is impossible to have an empana or eg ayaka  of corn cake out of it.

For the filling, we use a mixture based on minced beef in our recipe. Of course you could also fill the empanas with something else, such as cheese or fish.
