The best salsa ever

Is salsa really Antillean? No… but certainly Caribbean! In the Dominican Republic and Puerto Rico, salsa is 'every day food' – and why not?

It is very healthy, ready very quickly and fits almost everywhere. It is certainly an asset in Antillean cuisine!



This recipe makes a large bowl of salsa – certainly enough for 4 people.

INGREDIENTS:

  • 3 tomatoes
  • 3 onions
  • 1 / 2 red onion
  • 1 Madame Jeanette pepper
  • 3 cloves garlic
  • 1/2 avocado
  •  250 gr cherry tomatoes
  • 1 bunch of cilantro
  • the juice of 1 lime
  • 1 tablespoon of (olive) oil
  • 1 / 2 teaspoon of salt
  • 1 / 2 teaspoon black pepper

PREPARATION OF SALSA:

Grill the spring onions, tomatoes and Madame Jeanette pepper until they turn dark on all sides.

(This can be done using a grill pan, barbecue, or in the oven)

Now cut the tomatoes into cubes and put them in a large bowl.



Chop the red onion and cut the spring onions into fine rings. Add this to the tomatoes.

Cut the cherry tomatoes in half, dice the avocado and chop the coriander. Add these too.

Take the Madame Jeanette pepper and put it together with the garlic in a mortar (or food processor)

Grind them together and add the lime juice and oil.



Finally, add the salt and pepper and then mix all the ingredients together.

Let the salsa stand for at least an hour to allow the flavors to blend well.

Serve with tortilla chips or with an evening meal.
