Shrimp curry and green beans

Shrimps and beans always work well together, but in this curry the flavors really come into their own.

You can also make this curry with string beans or long beans instead of green beans. The result will also be delicious!



This recipe is for 4 people.

INGREDIENTS:

  • 500 gr shrimps
  • a sprig of cilantro
  • 1 tablespoon of (sunflower) oil
  • 200 ml water
  • 1 red pepper, diced
  • 1/2 Madame Jeanette pepper
  • 3 cloves garlic
  • 1 onion, chopped
  • 1 tablespoon of curry powder
  • 600 gr green beans
  • 1 / 2 teaspoon of salt
  • 1 / 2 teaspoon black pepper

PREPARATION CURRY:

First wash the beans and cut the ends off. Then break the beans in half.

Then cut the bell pepper into cubes and chop the onion. Squeeze the garlic cloves.

Now cut the Madame Jeanette pepper and the coriander very fine.



Then peel the shrimp and remove the intestinal tract. Mix them with the oil, the coriander and the Madame Jeanette pepper and let them marinate for 15 minutes.

Then heat a pan over medium heat. Fry the shrimp (with the marinade) in 3 minutes.

Then set the shrimps aside and allow any water to evaporate from the pan.

Now fry the onion in the remaining marinade. After 3 minutes, also add the garlic.



Then add the curry powder, salt and pepper. Let it cook gently for another 2 minutes.

Now add the green beans together with the bell pepper and the water.

Finally, put the lid on the pan and let it simmer gently for about 10-15 minutes.

Now add the shrimp again.

Remove the pan from the heat and stir well afterwards.

Finally, serve the curry with rice or funchi.



Enjoy!

tip 1: instead of green beans, string beans or long beans can also be used.

tip 2: for an extra creamy curry you can replace the water with coconut milk
