Cupcakes – basic recipe for vanilla cupcakes

Cupcakes are sweet, small and just the right portion for one person. They are quick to make and ideal for a party: your guests are not nearly as full as from a whole slice of cake!

Reduce Antillean pies

One of the most frequently asked questions is whether you like our traditional cakes, such as 'bolo di cashupete', 'pineapple upside down cake' or chocolate cake into a cupcake recipe… and how?



The answer in almost all cases is a resounding, “Yes!” – In fact, most cakes (with the exception of biscuit-based cakes) can easily be converted into cupcakes. You can then no longer stick to the original recipe. You would then get too many cupcakes.

The small cupcakes are also baked for a shorter time than a large cake, and at a slightly higher temperature.

Would you like to make one of our traditional cakes, but rather in small? Then always follow this recipe for the cake. You will arrive exactly at 24 cupcakes. Do you only want to make 12? No problem! Then simply halve all ingredients. The baking time remains the same, of course.

Ingredients for 24 cupcakes:

  • 350 gr self-raising flour
  • 350 gr butter
  • 275 gr granulated sugar
  • 2 sachets (16 gr) vanilla sugar
  • 8 eggs
  • a pinch of salt

Preparation of vanilla cupcakes:

Preheat the oven to 175 degrees. (convection oven: 170 degrees)



Take a large bowl and mix the butter with the sugar and vanilla sugar. Beat it all together until you get an airy mixture.

Now add the eggs one by one and beat well again, until the eggs are incorporated in the batter.

Finally add the baking flour and salt and stir the batter into a homogeneous mixture.

Use two trays with 12 cupcake cases. Place a cupcake paper in each mold. Then divide the batter over the ramekins. This is best done with an ice cream scoop or gravy spoon.

Bake the cupcakes in about 20 minutes, or until one satéskewer comes out clean.


Frosting for cupcakes

Decorate the cakes the way you like best. Almost any filling that you use in/on a cake can be used to spray a nice 'tuft' on the cupcakes. You will find plenty of inspiration on our website. We have already listed a few for you…

How do you keep them?

When cupcakes are not decorated, you can store them in a closed box at room temperature. However, some fillings must be kept refrigerated.

Especially when dairy is used in a filling (such as with cream cheese frosting or buttercream) it is important that they are kept refrigerated. You can then keep the cupcakes refrigerated for a maximum of 72 hours before using them.

In addition to 'regular' vanilla cupcakes, you can also bake delicious chocolate cupcakes by adding 5 tablespoons of cocoa and 2 tablespoons of milk to this recipe. Mix the cocoa with the flour and add the milk last. You make the chocolate cupcakes extra tasty with some 'chocolate chips' (chocolate drops)

You can also choose to give the batter a tablespoon of gingerbread spices for extra flavor.
