cocada – candies made of grated coconut

door Linda Terrizzi

Cocada is delicious Antillean candy for anyone who has a 'Boka Dushi' (sweet tooth). It is most commonly sold in the Antilles in small street stalls. Here in the Netherlands we unfortunately have to make it ourselves. But with our recipe that becomes a piece of cake!

The great thing about this candy is that you can find all the ingredients of this candy in the supermarket. The trick is to let the candies dry properly, without making them so hard that you break your teeth on them.

With a little practice and the right technique, your cocadas will work perfectly every time.

Ingredients:

The main ingredients of the cocada are (of course!) Grated coconut and sugar. In addition, we also use a portion of condensed milk to ensure that the cocada does not become too hard.

It is best when you use freshly grated coconut for this recipe. If you don't feel like grating, you can of course also take grated coconut from the store.

WHERE CAN I FIND THE RECIPE FOR COCADA?

You will of course find the recipe for this delicious candy in our new cookbook 'the complete Antillean kitchen'.

In the book you will find really all recipes from the kitchen of Aruba, Bonaire en Curaçao. It took us seven years to collect these 300(!) recipes. The book has therefore become a complete representation of our kitchen. Complete with beautiful color photos and a fresh layout, of course.
