Mushroom soup with garlic bread

There are few things as delicious as a good mushroom soup (or Queen's soup) – especially when you serve it with French bread with homemade herb butter.

We make the recipe with bake-off bread rolls – nice and simple! But if you really want to give your best, you can make it with homemade pan Franses of Pan di fornu.



Make it vegan!

Should or should you not eat animal products? This soup is almost completely vegan: there is only some milk protein in the stock cubes. You can replace it for vegetable stock cubes. (but fair is fair: the cubes of forest mushrooms are really very tasty!)

INGREDIENTS:

For the soup

  • 2 liters of water
  • 1 medium onion
  • 1 clove garlic
  • 4 wild mushroom stock cubes *
  • 250 ml soy (cooking) cream
  • 1 tl dried thyme
  • 1 tsp rosemary needles
  • pinch of dried oregano
  • 1 tsp black pepper
  • 500 gr mushrooms
  • 50 gr wheat flour
  • 50 ml olive oil
  • parsley, for garnish

For the herb butter

  • 50 gr butter or margarine
  • 2 cloves garlic
  • 1 / 2 tsp salt
  • 1/2 tsp black pepper
  • knife tip oregano
  • pinch of dried thyme

PREPARATION MUSHROOM SOUP:

Heat the olive oil with the wheat flour in a large pan. Stir until the flour turns slightly.

Now add the water in one go and beat with a whisk to prevent lumps.



Heat the water until it boils and then add the stock cubes.

Chop the onion and squeeze the garlic clove. Add this to the soup.

Cut the mushrooms into slices and put them in the pan.

Now add the pepper and the spices. Let the soup simmer for about 20 minutes.



Now add the soy cream and let the soup boil for another 2 minutes with the cream.

When you serve the soup, you can sprinkle the parsley over it.


Then mix the herb butter by melting butter or margarine in a jug.

Add the salt, pepper and spices.

Grate the garlic cloves very finely and add them to the butter.

Take two (baking) baguettes or some pan di fornu and cut them diagonally.



Spread some of the melted butter in each cut.

Preheat the oven to 200 degrees.

Bake the buns for about 10 minutes until golden and crispy.
