Cannoli Antiyano – fusion pastry with cashew filling

Cannoli Antiyano are small pastries with cashew filling. You get the idea: this is not a traditional recipe, but one that we invented ourselves.

As most of you will already know, I am married to a half Italian. During one of our holidays she met me the delicious 'Cannoli Siciliani': a fried biscuit with a delicious cream based on ricotta.



These pastries have been my favorite treat ever since and are the first thing I spend my money on each year in Italy. (Yes, even before buying a slice of pizza or an ice cream!)

Fusion cooking

This fusion version of the classic cannoli uses the authentic Antillean cashew cream, as we like it on our 'Bolo di Cashupete' smear. The result is truly 'the best of both worlds'… a bite that is less heavy than a whole piece of cake, and a delicious way to show off our cashew cream even better!

Ingredients

The cannoli and the filling are made separately. For the cookies you use wheat flour, sugar and white wine. After making the dough, the cookies are rolled up and baked in the hot oil.

We make the filling the Antillean way: with cashew nuts! In addition, a portion of condensed milk and rum goes into the filling. Yum!
