Bread with rosemary and sea salt

This flat bread is most reminiscent of a tasty focaccia. The rosemary is kneaded into the dough and the sea salt flakes go on top.

The bread is delicious when you top it with, for example tuna salad or slices (Christmas ham.



INGREDIENTS:

  • 500 gr wheat flour
  • 50 ml olive oil
  • 8 g dried yeast OR
  • 25 g fresh yeast
  • 1 teaspoon salt
  • 1 teaspoon of sugar
  • 2 tablespoons of rosemary needles
  • 280-300 ml warm water (30 degrees)
  • another 50 ml of olive oil
  • 1 tablespoon of sea salt flakes
  • optional: 15 gr flour improver *

PREPARATION BREAD:

Start by activating the yeast. You do this by mixing 50 ml of the water with the sugar and yeast.

Let it stand for about ten minutes, until it starts to foam.

Take a large bowl and put the flour in it.

Mix in the salt and the rosemary needles.



Not in the mood for needles in the bread? Then grind them fine in the food processor.

This works best when you add 2 tablespoons of flour before grinding – this keeps the mixture nice and dry.

Now mix the yeast mixture and (almost) the rest of the water into the flour and knead it into a smooth dough.

You knead by hand for about 15 minutes and with a machine about 7 minutes. This way you can be sure that the gluten is well developed.



* do you prefer bread without a hard crust? Knead 15 grams of flour improver through the dough.

Let the dough rise for at least an hour in a large bowl that you cover with plastic wrap.

Knead the dough again briefly.

Line a baking tray with baking paper and divide the dough over it. You now get a large square of about 2 cm high.

Let the dough rise for another hour in this way.

Preheat the oven to 210 degrees (convection oven: 200 degrees).



Carefully poke holes in the dough with your finger, about 10cm apart.

Then spread the olive oil on it with a brush.

Sprinkle your bread with the sea salt flakes.

Bake the bread in about 20 minutes and golden brown. Then let it cool and cut it into pieces.
