Bolo pretu – Antillean black cake

De bolo pretu (black cake) is a traditional Antillean cake. This elaborate cake is the star of every big event. Communions, weddings, anniversaries…. if it is a real milestone, there may be Bolo Pretu to be given to the guests. Pay close attention to the processing time – this cake will take you at least two months!

In Bolo pretu go many different kinds of dried fruits. The best versions are made with cherries, dates, figs, raisins and plums, among others. Nuts are also chopped into pieces and soaked in this mix.



In addition, there is also a considerable amount of drink. Rum, Blue Curaçao, cherry liqueur and more… Even after baking, the cake is again soaked in different types of liqueur.

Cherry Cordial

If you follow our traditional recipe, you will find that Cherry Cordial also goes into the cake. This is very difficult to find in the Netherlands (at the liquor store). Fortunately, you can order the Cherry Cordial online nowadays. If you don't think so, you can use the same amount of Kirsch.

A little piece

You normally eat a very small piece of this black cake. Logical, too, since it contains a significant amount of alcohol. The alcohol keeps the cake just about 'infinitely' good. There are stories of people who still enjoy their piece of cake years after baking. The alcohol has held up well all this time and the taste is then of course extra strong!
