Bolo di wòrtel – Carrot cake

De bolo di carrot (Antillean carrot cake) is a great way to incorporate some vegetables into a dish that would otherwise be unhealthy. Not that it's a good idea to eat this in the evening instead of a salad, but you get the idea.

With the spices, it becomes a wonderfully spicy experience to eat a piece of this cake with a cup of tea or at a party.



Ingredients:

Cake:

  • 4 eggs
  • 300gr flour
  • 250gr brown sugar
  • 175ml sunflower oil
  • 400gr carrots
  • 75gr shelled walnuts
  • 1 tablespoon/bag baking powder
  • 2 teaspoons of cinnamon powder
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon of ginger powder
  • a pinch of salt
  • butter or oil for greasing

Frosting:

  • 200gr soft butter
  • 200gr cream cheese
  • a cap of vanilla essence
  • 300gr powdered sugar
  • (optional) mixed nuts for decoration

Preparation bolo di root:

Preheat the oven to 175 degrees and grease a baking tin (approx. 24cm) with butter.



Grate the carrots and chop the walnuts into small pieces. Set aside. Beat the eggs with the sugar until creamy. Mix in the oil here.

Sift the flour with the salt, cinnamon, ginger, cloves and baking powder. Mix this with the eggs. Now also add the carrots and walnuts. Stir everything well until a smooth batter is formed.

Pour the batter into the tin and bake the cake for about 60 minutes, or until one satéskewer comes out clean. Let the cake cool completely and then cut it in half once.

For the frosting of the bolo ie carrot, you first mix the butter with the icing sugar. Beat this until fluffy. Now stir in the cream cheese and vanilla, until it becomes a stiff cream. Finally, put the frosting in the refrigerator for at least an hour.



Coat the bottom layer of cake with frosting and place the top layer on top. Also coat the top layer and the sides of the bolo ie carrot with frosting. Decorate the bolo ie carrot with the mixed nuts.
