Basic recipe chocolate ganache – dark, milk or white!

15Chocolate ganache is used in many ways. You can apply a thin, shiny layer on a cake or make delicious truffles with it. You can also whip it up and use it as frosting / filling for a chocolate cake. Chocolate ganache is also used as a 'drip' on the famous drip cakes.

Note: When making a drip cake, the aim is for the chocolate ganache to dry faster than normal, so that the 'drip' doesn't reach the bottom of the cake. For this you need a slightly different ratio than normal. Different proportions also apply to chocolate truffles. Of course, these proportions are clearly indicated in the recipe.



Cover cake with fondant

Ganache is also a perfect base for covering cakes with fondant or marzipan. Because it has almost no moisture and is slightly harder / firmer than buttercream, you can easily apply sharp edges with it. Covering with fondant then becomes a piece of cake!

So it really is an indispensable recipe for anyone who loves baking. Fortunately, it is also a very simple recipe. You make it in about 5 minutes and with the right preparation it can hardly fail.

INGREDIENTS:

For PURE chocolate ganache

  • 100 gr dark chocolate
  • 100 ml cream

For MILK chocolate ganache

  • 150 gr milk chocolate
  • 100 ml cream

For WHITE chocolate ganache

  • 200 gr white chocolate
  • 100 ml cream

For making a DRIPCAKE

  • 150 gr dark chocolate
  • 100 ml cream

For making chocolate TRUFFLES

  • 200 gr dark chocolate
  • 100 ml cream

PREPARATION CHOCOLATE GANACHE:

Choose which ganache you want to make: plain, milk or white.



Copy the ingredients and proportions from the list above.

Chop the chocolate into small pieces and put them together in a bowl.

Then heat the whipped cream in a pan until it almost boils.

Now pour the hot cream on the chocolate in the bowl.



Note: It is VERY important that you DO NOT put the chocolate in the pan with the whipped cream. The pan is too hot for the chocolate and it could burn!

Mix the chocolate pieces with the whipped cream until dissolved.

Stir the ganache well until you get a shiny substance.

Let the ganache cool slightly. It is now ready to use.
