Barbecue chicken the Antillean way

Barbecue chicken, that doesn't really need any further introduction, right? Who doesn't know it? Deliciously tender pieces of chicken, perfectly cooked… with grill marks! With our recipe for barbecue chicken the Antillean way you will definitely get the perfect result!

In the Antilles we call barbecue chicken by the way 'Galiña alaparia'. And alaparia is really just a phonetic translation of the Spanish “a la parilla”, which literally “on the grill” means. The grilled chicken is of course the best when it is prepared on the barbecue, but with the delicious herbs it also works great in the oven or from the grill pan.



Barbecue taste in bad weather

A tip for when you do want the nice smokey taste of the barbecue, but if the weather is too bad to actually light it: use a few drops of "liquid smoke". During smoking in a smoker, smoke is collected and condensed. The result is a dark liquid with an incredible taste and without artificial flavors or fragrances.

You can use liquid smoke or 'liquid smoke' buy in small bottles at barbecue (web) stores. But beware: really only use very little of it. The taste is so concentrated that a few drops are enough.

This recipe is for 4 servings



Ingredients:

  • 1,5 Kg chicken pieces: drumsticks, chicken thigh or wings
  • salt and pepper to taste
  • 2 tsp onion powder
  • 1 tsp cumin (powder)
  • 2 tsp garlic powder
  • 1 tl dried thyme
  • 2 tl dried oregano
  • 1 tbsp paprika powder
  • 1 tsp cayenne pepper
  • 100 ml sunflower oil

Preparation of the barbecue chicken:

Wash the chicken pieces and then pat them dry with kitchen paper. The skin can remain around the chicken pieces, it will be fried crispy later.

Then mix all the spices with the sunflower oil and pour this mixture over the chicken. Then put the chicken in the fridge for at least 3 hours (preferably overnight!)

Then heat the barbecue or grill to about 180 degrees. Then place the chicken on the barbecue grill (or under the grill) and bake the pieces for about 30 minutes until cooked and crispy. Turn the chicken pieces every 10 minutes to avoid burning.

Serve the barbecue chicken with baked potato, funchi or rice, (and a fresh salad!) so you get a complete meal… Enjoy your meal!
