A traditional dishBanana stobá is one of the traditional stews we eat in the Antilles. Usually this is stobá made with nearly ripe plantains, the skins of which are deep yellow. For those who really don't like a sweet stew, there is also a solution: use the plantains with green skin! These don't taste sweet at all, and are most similar in taste to a potato… but a lot firmer.
