Banana stobá – Plantain stew

Banana stobá (or sometimes written as “stobá di banana”) is a delicious Antillean stew of plantains. Bananas are really not only suitable for sweet (after) dishes! The sweet plantains taste delicious in this savory stew, without turning it into a dessert. As with almost all main courses, the following applies here: serve with rice or funchi! 

A traditional dish

Banana stobá is one of the traditional stews we eat in the Antilles. Usually this is stobá made with nearly ripe plantains, the skins of which are deep yellow. For those who really don't like a sweet stew, there is also a solution: use the plantains with green skin! These don't taste sweet at all, and are most similar in taste to a potato… but a lot firmer.
