Baked plantain in dough

Almost everyone likes banana fritters! The most common way to fry plantains in the Antilles is 'just' as slices in a layer of oil. But if you're craving a really tasty snack, you can of course bake them this way!

By giving the plantains a layer of batter, you make it something very special. A delicious sweet snack that you can eat alone or with dinner.



Baka bana or pisang goreng

Wherever the beautiful, large plantains occur, you have a form of these 'banana fritters': fried bananas in a batter. And in almost every kitchen the recipe is about the same. In Suriname they call this snack 'baka bana' and the Indonesians would say it is 'pisang goreng'.

On the English-speaking islands of the Caribbean, these tasty snacks are called 'banana fritters', so for lack of an “official” title in Papiamentu, we'll stick with that name.

INGREDIENTS:

  • 3 plantains
  • 200 gr self-raising flour
  • 50 gr cornstarch
  • 50 gr sugar
  • a pinch of salt
  • 200 ml spa red or sprite
  • sunflower oil for baking

PREPARATION BANANA FRITTERS:

Mix the self-raising flour with the sugar, cornflour and salt in a large bowl.

Carefully add the spa red / sprite and stir until you have a thick batter.



Peel the plantains and cut them in half.

Now cut both banana pieces into 4 slices (lengthwise)

Heat the oil in a wok or pan.

The oil should be about 175 degrees.

Drain the bananas on kitchen paper.

Enjoy!

tip: in Suriname they eat this 'baka bana' with spicy peanut sauce – definitely an idea to try!
