Drigidek – Arubaanse spice cake

Drigidek (sometimes written as drikidek) is a treat Aruba. This gingerbread has a very special color and taste because of a secret in the recipe. The drigidek is made with a batter based on dark caramel.

The name of this delicious, ArubaDutch gingerbread is a bit unusual – if you slip your mouth, something that looks like 'dung' will soon come out of your mouth… and that doesn't sound too good of course. Yet this traditional Arubaanse spice cake a real delicacy.



A little secret in the recipe

The secret of a good 'drigidek' lies in cooking the syrup. When you do this in the right way, the cake gets a lot of flavor and color. Be careful though… burnt sugar is terribly hot and will stick to anything!

Together with many other spices, this gives the cake its characteristic color, aroma and taste. This looks a bit like Dutch gingerbread, but different. It is real pastry that you must have tasted before you really know what it is.
