Arroz a la Cubana – Cuban rice dish

A Caribbean classic, namely “arroz a la Cubana”. You really can't go wrong with Cuban roots.

This meal consists of fried rice with vegetables, plantains and a fried egg. Easy, but above all very tasty! The following recipe is for 4 people.



Ingredients:

  • 3 tablespoons sunflower oil
  • 1 garlic clove, minced
  • 1 bay leaf
  • 250 gr minced meat
  • 1 onion, chopped
  • 1 carrot, sliced
  • 1/2 red bell pepper, cubed
  • 1 can of corn kernels
  • 200 gr peas (freezer)
  • 1 can of diced tomatoes (400 ml)
  • 4 eggs
  • 1 plantain, sliced
  • 1 tablespoon of dark soy sauce
  • 2 tablespoons of raisins
  • 4 cups of cooked white rice
  • salt and pepper to taste

Preparation ARROZ A LA CUBANA:

First, heat 2 tablespoons of oil in a large frying pan. Saute the garlic and the bay leaf until fragrant.

Then add the chopped onion and fry until it looks translucent.

Then add the minced meat and fry until the meat is cooked through.

Now take the carrot, bell pepper, corn kernels and peas and add them to the mixture.



Now fry until the vegetables are soft.

Then add the can of tomato cubes and let it simmer gently for 15 minutes.

Then add the soy sauce, the raisins and salt and pepper to taste.

Now take the plantain slices and fry them in a little oil until they are golden.



Then make a fried egg from the 4 eggs, by carefully frying them on one side in a frying pan.

Now place a portion of rice on each plate. Add some of the sauce with vegetables and meat.

Finally finish the plate by placing a few slices of plantain along the rice.

Finally, place a fried egg on each plate. - Enjoy your meal!
