Arros bruá – Antillean 'fried rice' / nasi

Arros bruá is the Antillean way to use up leftover rice, vegetables and meat. It's our version of 'fried rice'. You can make the dish as rich as you want.

Technically, this is one of those dishes that doesn't have a real 'standard' recipe. Just like the Indonesian nasi goreng and the Surinamese moksi alesi, it's just a way to use up leftovers from the previous days. Our version of cliques day! 



The name 'arros brua'

The name of this dish is actually quite funny: it literally means "rice, confused!" – because there are so many different ingredients in the dish, it seems like everything is just about mixed up and thus 'mixed up'. So you see: we like a functional description as a name every now and then!

Ingredients in the arros brua

You can really put anything in this dish. Pieces of chicken, sliced ​​sausage or fried rice… it all tastes great, as long as you combine them with the traditional herbs and sauce of the arros brua.

You can vary endlessly, especially with the vegetables. Add exactly what you like to make your own version of the dish. If you've done your best for the rest of the week and have no leftovers, you can stick to our recipe for real, traditional Antillean Arros Brua.

The recipe is for 4 people. In the preparation I have taken into account that no one likes much washing up. If you use this order, you can put everything in a wok in succession and thus save on the number of dirty pans.
