Antillean spaghetti noodles

door Linda Terrizzi

Uhhh… yes, how am I going to explain this again? It's not spaghetti and it's not noodles, and yet it's both. Do you still get it?

As you may know, I married a half-Italian. And in Italy spaghetti is natural'quite a thing'. You can't think too lightly about that. And you can't just eat that without a tasty, traditional sauce on it (because if you thought the Antilleans liked to stick to tradition, then you haven't experienced the Italians yet!)

However, I recently learned that in the Surinamese and Antillean kitchen, 'bami' is often made with spaghetti. Why? Because spaghetti is much firmer than the egg noodles you normally use for noodles. Not only that, but spaghetti also lasts much longer. You can make it, reheat it and (for example during a party buffet) keep it warm without the pasta becoming limp and sticking. So super handy!

One drawback, for the Italians then, the spaghetti has to be broken in this recipe. Preferably even twice, so you get strings of about 8 centimeters. Absolute sacrilege, of course. But after tasting this delicious dish, even my wife is convinced: noodles made from spaghetti are just really delicious!

Ingredients

In addition to (of course) spaghetti, this side dish includes pak choi, garlic, ginger and soy sauce. This gives the 'bami' its characteristic taste. It tastes delicious next to a piece of barbecue meat, but is also with an Antillean saté very tasty.
