Amaretto cake, deliciously airy & with almonds

This amaretto cake is simple, but irresistibly delicious. The almonds on top make it complete!

If you follow us on Instagram, you will occasionally see a 'story' passing by around midnight. Usually a cake tin with batter disappears in the oven. The children are in bed and so there is plenty of time for me to experiment with a new recipe. 



For weeks there was a bottle of Amaretto in the cupboard. Frankly, neither Linda nor I are drinkers, so the Amaretto was just waiting there once in one kesio to disappear. Until late at night I got the idea to bake a cake in which the drink was incorporated.

Because Amaretto is based on almonds, I also decided to add (extra) almonds and almond essence to the cake. That turned out to be a success! Bragging about your own creations is not allowed, but I think this is one of the tastiest cakes from our collection. It is also very suitable as a basis for a birthday cake.

After the photo of the battered cake tin appeared on our Instagram account, the messages poured in: “Recipe PLEASE!” you wrote en masse. So, as promised… here's the recipe for that delicious Amaretto cake!



INGREDIENTS:

    • 300 gr wheat flour, sifted
    • 200 gr butter
    • 50 ml olive oil
    • the juice & grated zest of 1 lemon
    • 250 gr granulated sugar
    • 1 packet of vanilla-flavored sugar
    • a cap of almond essence
    • 4 eggs
    • 50ml Amaretto
    • 1 bag (16 gr) of baking powder
    • pinch of salt
    • a handful of almonds

PREPARATION AMARETTO CAKE:

Important: make sure ALL ingredients are at room temperature!

Preheat the oven to 170 degrees and grease a cake tin with butter.

Take a large bowl and mix the butter with the sugar and eggs.

I like to do this with a hand blender, but an electric mixer or whisk also work fine.



Mix the ingredients well, until you get an almost white mixture.

Grate the zest of the lemon and squeeze the lemon. Then add both to the butter mixture.

Now also add the Amaretto, the vanilla sugar, the wheat flour, the olive oil, the baking powder, the almond essence and the salt.

Beat the mixture well until you get a smooth (but firm) batter.

Cut about half of the almonds into narrow strips with a sharp knife. Keep the remaining almonds whole.

Pour the batter into the cake tin and decorate the center of the cake with the almonds.



Now place the cake tin in the middle of the oven and bake the Amaretto cake for about 50-60 minutes (or until a satéprick comes out clean.)

Let the cake cool in the baking tin for a few minutes and then carefully remove it. Place the cake on a wire rack and let it cool completely.
