Spring Brownie Bars

These spring-themed brownie bars are made with a bottom of cookies (dough) and a top of brownies. We make the decoration with white chocolate, colored sprinkles and wafer butterflies.

Spring is finally approaching and what better way to celebrate that (despite all the hassle in the news) than with something tasty from the oven? Bonus points if it also looks cheerful. Because of their sweet colors, these brownie bars are ideal for a colorful Easter breakfast ... or how about a high tea to celebrate spring?

Edible butterflies

The wafers of wafer really steal the show! When you buy them, they are completely flat. Also nice, but when you fold the wings up slightly, they seem to really be able to fly. You can order them in sets of 16. For the price you really do not have to leave it: 16 pieces cost € 3,99 in total ... so that is a quarter each;)


Brand New Cake

For these brownie bars we use the baking mixes of Brand New Cake. These mixes can be ordered from Baktotaal Bouwhuis. Of course you can also make the brownies and cookie dough 'from scratch'. It is then a bit more work. Would you rather do everything yourself? Then combine us basic recipe for brownies and that for (the bottom of) Antillean tèrt.

We use the Brand New Cake baking mixes, because they are different from the baking mixes in the supermarket. These are professional mixes that are also used by bakers. Unlike other brands, you can buy Brand New Cake products in small quantities. So you can use the professional quality of the products, but you are not immediately tied to bags of 20 kilos. Useful!

You can make a large bowl (20x30cm) of brownie bars from this recipe… after that it depends of course on how big you cut them. We made 20 pieces in total.  



  • For the bottom:
  • 300 gr Brand New Cake biscuit mix
  • 90 grams of unsalted butter
  • ½ beaten egg

    For the brownie layer:
  • 500 gr Brand New Cake brownie mix
  • 50 gr butter, at room temp.
  • 2 (large) eggs
  • 100 ml water

    For the decoration:
  • 150 g white chocolate drops
  • A handful of crispy chocolate pearls
  • Some Ouwel Butterflies

Preparation of brownie bars

Start making the cookie dough. To do this, mix 300 grams of the cookie mix with 90 grams of butter and ½ beaten egg. Knead these ingredients together until you get a firm dough. Then roll the dough into a ball and wrap it with plastic wrap. Put the dough in the fridge for about 30 minutes.

In the meantime, continue making the batter for the brownies. To do this, mix 500 grams of the brownie mix with the butter, eggs and water. Make sure all ingredients are at room temperature when you mix them!


Beat the mixture into a firm batter and set it aside.
Preheat the oven to 170 degrees and grease an oven dish with butter or baking spray. Then take the cookie dough and press it flat into the dish, so that the whole bottom is covered with a layer of about 5 mm.

Then pour the brownie batter onto the cake base. Bake the brownie bars in about 40 minutes, or until one satéskewer comes out clean.


Decorate the brownie bars

Then remove the dish from the oven and sprinkle the chocolate drops over it, while the brownies are still hot. After about 10 minutes, the chocolate will have melted and you can spread the drops with a spatula or palette knife to a smooth layer. Then let the brownies cool to room temperature.

When the chocolate has become thick (but not yet hard!) You can sprinkle the crispy pearls over it. Of course you can also choose another decoration that fits your theme. Now also cut the brownies into pieces of the desired size.

Then gently bend the wings of the wafer butterflies up and press the butterfly's 'body' into the chocolate so that they stick. We have chosen to place a butterfly on half of the brownies and leave the other half without.

Finally, let the brownie bars cool completely and serve them when the chocolate has hardened again. Enjoy your meal!
