Bolo di funchi – cornmeal / polenta cake

De  bolo di funchi is yet another way to use cornmeal. Usually we cook funchi and eat it as a side dish, but it is also great for a tasty cake.

This fluffy cake is made with a mixture of wheat and corn flour. He is not overly sweet. The orange gives it a little extra flavor – just enough to make a delicious breakfast dish.



For the recipe, we use maize flour from the Harina PAN brand – this maize flour has already been steamed and is therefore suitable for making a firm dough and batter.

Ingredients:

  • 100 gr wheat flour
  • 3 eggs
  • 100 ml sunflower oil
  • 300 ml milk
  • 50 gr butter
  • 1 bag (16 gr) of baking powder
  • 300 gr cornmeal
  • 250 gr sugar
  • the juice and the grated zest of 1 orange
  • a pinch of salt
  • powdered sugar, to decorate

Preparation bolo tue funchi:

Preheat the oven to 170 degrees.

Mix the corn flour with the wheat flour, the salt and the baking powder.



Make sure the butter is at room temperature and mix it with the oil.

Then beat the sugar in the oil mixture.

Now also add the milk. Then add the eggs one by one and beat until fluffy.

Grate the zest of the orange and squeeze the juice.



Add this to the mixture and beat well again.

Finally add the flour mixture and stir it all together until you get a homogeneous batter.

Grease a baking tin (22-24cm) with butter and dust with a little flour.

Pour the batter into the baking tin and bake the bolo di funchi in about 45-50 minutes, or until one satéskewer comes out of the cake clean.

Sprinkle the cake with powdered sugar and cut into slices.

Tip: A layer of chocolate ganache also goes perfectly with this cake. To make it, mix 75 g dark chocolate with 50 ml whipped cream over low heat. When both ingredients have just melted, carefully pour the mixture over the cake.
