Ham di pasku – Traditional Antillean Christmas ham

No Antillean Christmas is complete without a few slices of Ham di Pasku. In this recipe we start from a completely RAW ham. When you have bought a smoked / seasoned ham from the butcher, you can immediately start with step 3 (preheating the oven)

INGREDIENTS:

  • 1 small ham (2 to 2,5 kg)
  • 150 grams of brown sugar
  • 4 tablespoons of Honey
  • 1 liter of red wine
  • 1 Large green pepper, roughly chopped
  • 5 Bay leaves
  • 1/2 bunch Parsley, chopped
  • 10 Cloves
  • 1 Onion, roughly chopped
  • 5 cloves of garlic, chopped
  • 1 Small can of pineapple rings (400ml)
  • 5 glacée cherries, halved

PREPARATION HAM DI PASKU:

Bring the ham to the boil in the red wine and then add the bell pepper, bay leaves, parsley, onion, garlic and brown sugar.

Let it boil gently for an hour. Then remove the ham from the mixture and let it rest for 30 minutes.

Now preheat the oven to 180 degrees. Then cut 10 small diamonds (distributed over the ham) with a sharp knife and insert a clove into each diamond.

Brush the ham with the honey and let it brown in the oven for 45 minutes. Then remove the ham from the oven and remove the cloves.



Now decorate the ham with the pineapple rings and cherries (use toothpicks for this). Then place the ham in the oven for another 10 minutes with the pineapple and cherries, so that they also become nice and glassy.

Finally, let the ham cool for at least 15 minutes before slicing.
