Pika di Cabaron

Pika di cabaron is delicious Antillean shrimp sambal. Because this sambal or 'pika' is fried, it has much more flavor than the standard 'pika natural'.

We make this pika with dried shrimps. These have a lot of flavor and of course they have a much longer shelf life than fresh shrimp. By using dried shrimp you also prevent too much water from entering the sambal. That's something you always want to avoid!



You will also find a version of this shrimp sambal in the Surinamese kitchen. The sauce is a real flavor bomb thanks to the use of Madame Jeanette peppers, dried shrimps and a lot of spices. It is delicious with rice dishes or, for example, sauerkraut or okra soup.

Ingredients

In addition to -naturally- dried shrimps and hot Madame Jeanette peppers, this pika also contains tomato paste, oil and a lot of spices. This gives it a nice strong taste and, in addition to heat, it also adds flavor to the dish you mix it through.
