Making your own bagels is very easy! Bagels are sandwiches that originate in the United States. They are characterized by their shiny crust and of course the hole in the middle. Although bagels are made from "regular" white bread dough, there's a trick to getting them just right:
The bagels are first cooked in a pan with water and some baking soda (baking soda, or baking soda). This gives them their characteristic shiny layer after baking.
Homemade bagels are super tasty with smoked salmon, salad or avocado. But they cannot be resisted even with a simple slice of cheese or some jam.
You can make about 10 homemade bagels from this recipe.
- 500 gr wheat flour
- 20 g fresh yeast or 1 bag (7 gr) dried yeast
- 2 tsp salt
- 2 tsp sugar
- 1 egg, beaten
- 2 tbsp olive oil
- 2 tsp baking soda
- 1 egg white, beaten
- 2 tbsp sesame seeds or poppy seeds
PREPARATION OF HOMEMADE BAGELS
Take a bowl and put the flour in it. Mix in the yeast. We prefer to use dried yeast. Now also add the salt and sugar. (If you use fresh yeast, you can also first dissolve it in some water with the sugar and add this mixture to the flour)
Then add the oil, the beaten egg and about 270 ml of lukewarm water. Knead this into a cohesive dough. Is the bagels dough sticking too much? Then add a little more flour. Is the dough a bit crumbly? Then you can add a little more water.
Now knead the dough well and let it rise for 60 minutes in a bowl covered with plastic wrap. The dough should have doubled in mass during this time.
Then dust your work surface with some flour and knead the dough again (shortly). Divide the dough into 10 equal balls. Let the balls rest for about 10 minutes and then poke a hole in them with your index finger.
Now put your finger through the hole and make it slightly wider, like a donut. Let the bagels rise for another 30 minutes.
Cook the bagels… then bake!
In the meantime, heat a pan of water with 2 teaspoons of baking soda in it. When the water is boiling, slide one bagel into the water at a time. This may then be 'cooked' for about 60 seconds on each side.
Then remove the bagels from the water with a slotted spoon and put them back on the baking tray. Repeat until all bagels are cooked equally. Preheat the oven to 180 degrees.
Beat the egg white and coat the rolls with it. Sprinkle the bagels with some sesame seeds or poppy seeds, then bake for about 20 minutes until done and golden.
Finally, let them cool on a wire rack and top them with your favorite fillings. Enjoy your meal!
