One of the classic 'pandushi' (sweet rolls) of the Antilles is this 'pandushi di coco'. A good amount of grated coconut goes through both the dough and the filling, which gives these sandwiches their delicious taste.

After baking, the buns are decorated with a 'frosting' of condensed milk and eggnog – deliciously sweet and colourful!

Tips for baking pandushi di coco

The most delicious pandushis are soft inside and out. When making this recipe you want to make sure that the buns do NOT get a crust.

You can prevent the development of a bread crust in various ways. First, you can choose to put a cup of water on the baking tray in the oven. Due to the high temperature of the oven, the water evaporates.

The steam that is created prevents the bread from forming a crust. The pandushis then remain nice and soft inside and out.



Use of flour improver

Another way to prevent crusting is to use flour improver. This white soy-based powder can be found in some supermarkets and in all bakery and mill shops.

You use 15 grams (about 1 tablespoon) of flour improver on 500 grams of wheat flour. The result is even stronger than when using water: The sandwiches do not get a crust and also rise a lot higher!
