Cupcakes Tue cashupete – Antillean cashew nut cupcakes

These cupcakes di cashupete (or cashew cupcakes) are of course 'the little sister' of our traditional cashew pie. The Antillean 'bolo di cashupete' is perhaps the most famous (and tastiest!) cake from our kitchen. However, a point can easily be too heavy if you also want to serve your guests other snacks. 

For that reason, we were often asked if there is also a cupcake variant of the original recipe. It wasn't there yet!



Difference from the original cake

One stumbling block you will encounter is that the filling of the original cashew pie is particularly heavy. If the nuts are not ground properly, there are also pieces in them. Nice on your cake, but not such a good idea for cupcakes!

You want to be able to make a nice swirl on a cupcake. This is only possible if the original filling has been adjusted to a filling that is lighter and finer. We tried a lot of variations on the recipe and ended up with this version. In our opinion (more than) successful!

In addition, it is important that the recipe for the cake is also adapted to this smaller variant. And the baking time also differs considerably from the original 'bolo di cashupete'.

Ingredients cupcakes di cashupete

These small cupcakes, like the large cake, are made from a 'bolo di manteka' cake. That means that it is a cake made on the basis of butter. The filling mainly contains a lot of ground cashew nuts, as well as a large amount of condensed milk.



You can also use rum to your heart's content (if you like!) – in these cupcakes you can even add a little more rum than in the original filling. Don't like rum or don't drink alcohol? No problem! A little extra milk is also possible!
