Stobá di karko / conch

De stobá di karkó is a typical Antillean dish that is difficult to imitate in Europe. The reason for this is that the karkó (crown snail in Dutch) is hardly available outside the Caribbean.

Nowadays you sometimes see the conch in Surinamese or Chinese tokos and very occasionally even on the market.



The flesh of the karkó needs some attention. To make it nice and tender, it is first beaten a bit softer with a meat hammer. Then it is seasoned and stewed. The conch is one of the few seafood that needs a long preparation time to get cooked and soft.

You can also make this dish with other seafood, for example mussels. But you probably already feel it coming… in that case the preparation time is much shorter! Do you make the stew with other seafood than the karkó? In that case, first stew the vegetables until al dente and only then add the seafood.

You then simmer the dish for a few more minutes. This prevents the meat from becoming chewy and no longer being tasty.

Ingredients

In addition to - of course - the meat of the conch, this dish also includes bell pepper, tomato and butter. The vegetables and sauce give the karkó its delicious taste.



Our stews are traditionally made with funchi ate. This is a kind of cornmeal flat cake that has little flavor in itself. It is precisely for this reason that it is perfect to eat with a dish with a tasty sauce, such as this one stobá so karkó!

Of course you can stobá also fine with rice or even with potatoes. With a fresh salad and possibly some fried slices of plantain you complete the entire (Antillean) meal!
