Antillean Peanut Sauce

Antillean peanut sauce is really a bit different from the satésauce you may be used to. By using spices and hot peppers you give the peanut sauce that nice Caribbean touch.

Peanut sauce is eaten in many different places around the world. Most famous are probably the peanut or satésauce from Indonesia and the various sauces and stews with peanuts from West Africa.



However, peanut sauce is also made in the Caribbean and Suriname, for example. And preferably with as many spices as possible, so that the sauce has a very deep and special taste. Our recipe is quite similar to that of Surinamese peanut sauce.

For example, we eat the sauce with ours saté ku batata, if you fancy a different sauce than the Chinese sauce with star anise. This peanut sauce is also delicious with rice dishes and fried chicken!

Ingredients

In addition to - of course - peanut, this peanut sauce also contains hot (Madame Jeanette) peppers and many spices. Don't like too spicy? Then omit the chilies, or just use less than indicated. No problem!

Every good sauce contains a little bit of sweet, salty, sour and bitter… this peanut sauce is of course no exception. By the way, the sweetness comes from the soy sauce and the brown sugar we use. What's even better: replace the brown sugar with a piece of grated 'Gula Jawa' or palm sugar. This will give the sauce an even deeper flavor than it normally would have.
