Pandushi di pina colada

Just think… sweet rolls, pineapple, coconut and cream cheese. Sounds good, doesn't it? Meet our 'pandushi di piña colada'. It combines the delicious sweet Antillean sandwiches with the flavors of the classic cocktail.

This is perhaps the most elaborate of all 'pandushis'. And we have quite a few on our site! View them all via this link.



This version with pieces of pineapple and grated coconut as a filling is of course the most delicious with a good dose of your homemade cream cheese frosting.

for the dough:

  • 300 gr wheat flour
  • 50 gr sugar
  • 50 gr butter
  • 1 egg
  • 75 ml coconut milk
  • 7 g (1 bag) of dried yeast
  • 1 pinch of salt

for the Piña colada filling:

  • 50 gr butter, melted
  • 100 gr sugar
  • 100 gr canned pineapple pieces
  • 80 gr grated coconut
  • a few drops of rum essence

for the Cream cheese frosting:

  • 50 gr cream cheese
  • 50 gr butter, at room temp.
  • 75 gr icing sugar
  • a few drops of coconut essence

You will make 8-10 pandushis from this recipe.

Preparation pandushi di piña colada:

Grease a baking tin of 24cm with butter and then cover it with baking paper.

To make the dough, mix all the ingredients together and knead it
for 15 min. Then leave the dough in a warm place for an hour
until it has doubled in volume.



Now make the filling: chop the pineapple pieces and leave them whole
drain well. Then mix them with the other ingredients.

Now sprinkle your worktop with flour and roll out the dough into a rectangle of about 40x30cm. Then spread the filling over the dough, leaving the edges of the dough free. Roll up the dough as tightly as possible.

If necessary, brush the edges with a little protein to seal them well. Then cut the roll into 8 or 10 equal pieces and place them on their side in the baking tin. Finally let the rolls rise in a warm place for another 45 minutes.

Now preheat the oven to 200 degrees. Then bake the rolls in about 20 minutes until golden and cooked. Then mix all the ingredients for the frosting.



Then remove the pandushi di piña colada from the oven and spoon some of the frosting over the hot rolls. Enjoy your meal!
