Meat substitutes in Antillean cuisine

I know: I kick a holy house around here. Antilleans love their meat, chicken and fish. And yet there are people who for whatever reason do not use meat. How can you put the meat in eg stobá or replace soup best?

Tofu is falling apart… tempeh tastes like beans and the (expensive) packets of meat substitute from the supermarket are not great either.

Our answer to this question is resounding: “Seitan!” – we make this wheat gluten-based meat substitute entirely ourselves. It really only takes a few minutes (plus oven time) to make and it tastes great.

The structure of seitan remains firm no matter how long you stew, cook or bake it. The best part is that you can give the seitan the flavor you want while making it.
