Red wine cake with Barefoot

That we in the Antilles love pastry with alcohol in it, I don't need to tell you. Usually the drink goes on top of the cake afterwards. It works differently with this red wine cake… here the wine goes into the batter before baking!

For our collaboration with the California wine brand Barefoot we were allowed to develop a delicious recipe in which wine naturally plays the leading role. We didn't let ourselves be told that twice! It soon became clear: it will be a delicious (turban) cake with red wine and chocolate sprinkles. Sounds crazy huh? But the combination of the red wine, the creamy cake and the hint of cocoa that the sprinkles add is truly heavenly.

Barefoot compliment campaign

We made this recipe as part of the Barefoot compliments campaign. Such a nice concept: an (online) compliment for someone who really deserves it. Of course I chose my dear niece Gio for this. That's really my 'hero' and she can get a compliment from me every day.

My niece moved to the other side of the country to be with her lover and her family. She had three bonus children from her wife at a young age and last year she gave birth to a beautiful son. What I admire about her is that she is wonderfully herself and accepts others for who they are. Whenever I'm with her and her family, I feel like I can really be 100% myself, without being judged.

Such a warm feeling as they can give me, I find that alone at home. I am therefore very happy with our contact and we can't wait to visit them again after all the corona events. So my biggest compliment!

The recipe

For this recipe we used the red Malbec wine from Barefoot. This is a full-bodied, firm red wine, with a soft taste. Perfect to drink with red meat, but also irresistibly delicious in this cake.

I baked the cake in a 24 centimeter bundt pan. Of course you can also bake it in a cake tin or even a spring form.

Ingredients:

  • 300 gr butter, at room temperature
  • 200 gr granulated sugar
  • 100 gr brown caster sugar
  • 5 eggs, at room temp
  • 375 gr self-raising flour
  • 100 gr (pure) sprinkles
  • 2 sachets/tablespoons vanilla sugar
  •  250 ml red wine (Malbec, Barefoot)
  • 1 el cocoa powder
  • 2 tsp cinnamon
  • powdered sugar, for dusting

Red wine cake preparation

Preheat the oven to 175 degrees and grease a baking pan with butter.

Mix the butter, sugar and eggs in a large bowl. This is best done with a whisk or mixer. When the mixture is foamy, you can add the flour.

Now add the red wine, vanilla sugar, cocoa and cinnamon to the mixture and stir to form a firm batter.

Finally, mix the sprinkles into the batter. Then pour the batter into the baking tin and put it in the oven.

Bake the red wine cake for about 60 minutes, or until a satéprick comes out clean.

After baking, you can invert the bundt cake on a wire rack. When the cake has cooled you can dust it with some powdered sugar and cut into it. Enjoy your meal!
