Know your pika!

We like to eat it in our rice, we cook it in our stobá, use it in the filling for pastechi. We are of course talking about pika! Hot peppers are an indispensable part of our kitchen. Without their tasty flavor and spicy addition, our food simply wouldn't taste the same.

There are many different types of peppers. The list we have compiled here contains only a small part of it! They are classified by heat, according to the Scoville scale. Scoville designed this bowl as follows: He took juice from a certain kind of pepper and diluted it with an equal amount of sugar water. The juice was further and further diluted, until the heat could no longer be tasted. The number of times the juice has been extended with sugar water gives the peppers their 'Scoville score'.

We'll start this list with the least hot pepper and work our way up to the merciless killer...winner of the Guinness world record for pika!

1. Bell pepper

The pepper only gives taste, no heat. It usually tastes sweet and fruity. The pepper therefore scores 0 on the Scoville scale.p

2. Cayenne pepper

This pepper is also known as 'Spanish pepper'. It is a friendly pepper that adds a little bit of heat to the food. You can cut this pepper into rings and eat it without too much damage. He scores 2.000 on the Scoville scale

3. Jalapeño pepper

The Jalapeño is often used in Mexican food. It gives spice to salsas and chili. The Jalapeño has a smooth skin and a dark green color. It is often smoked and sold as chipotle pepper. The Jalapeño has a scoville score of 5.000

4. Rawit

The bird's eye pepper or bird's eye pepper grows in Asia. It is characterized by being very small. These peppers give off a heat of approximately 100.000 Scoville units.

The Thai pepper is very similar in appearance to the Spanish pepper or Cayenne pepper. These are slightly shorter, meatier and come in multiple colors. The Thai pepper also has a heat of 100.000 Scoville units

6. Adjuma pepper

In English, this pepper is called the 'Scotch bonnet pepper', because it was sometimes compared with the caps that English women used to wear. This pepper is most commonly used in Antillean and Surinamese cuisine. It is quite hot, but still has a nice, sweet taste. The Madame Jeanette pepper is very closely related to the Adjuma pepper. Both have a Scoville score of 350.000. You find this pepper, of course, mainly in the Caribbean and parts of South America.

7. Habanero

The Habanero pepper is, as it were, the brother of the Madame Jeanette. There are not many differences between the two peppers. They are both equally hot. It is true that the Habanero clearly lacks the sweet taste, which the Madame Jeanette does have. The Habanero pepper also scores 350.000 on the Scoville scale. Habaneros are found in South America and Mexico.

8. Ghost Pepper

Numerous videos are circulating on the internet of people eating a Ghost pepper… for years this pepper was the hottest in the world! The real name of this pepper is Bhut Jolokia and it is cultivated in India. The Ghost pepper scores a whopping 900.000 on the Scoville scale!

9. Trinidad Moruga Scorpion

This pepper from Trinidad is a real killer. With a score of 2.000.000 on the Scoville scale, it is the second hottest pepper in the world. A small piece of this pepper has it in it to provide a complete dish with heat. Peppers of this kind can only be held with gloves.

10. Carolina Reaper

This is it… the very-very-hottest pepper in the world! The Carolina reaper was cultivated in the South of the United States in 2013. Horticulturist Ed Currie crossed a type of Habanero pepper with a Ghost pepper and in 2013 obtained this relentlessly hot 'Carolina reaper' pepper. The Carolina reaper has a scoville score of 2.200.000 – or almost 7x as hot as 'our' Madame Jeanette pepper!
