You may have heard of it: Professor Grunschnabel's tasty, exotic ice cream. That is deliciously creamy ice cream in special flavors… and completely vegan! The ice cream is made with coconut milk and fresh fruit and is therefore suitable for just about everyone. Whether you eat vegan or, for example, have an allergy to gluten or lactose – an ice cream from Professor Grunschnabel is always possible!
The flavors of Professor Grunschnabel
The best thing about the ice creams is the new, exotic flavors with interesting names. For example, there is a “raspberry framboise”, in which raspberries are mixed with fresh-sour citrus juice. And how about the “Cafe el Khatib”: a deep coffee flavor with the addition of cardamom.
My personal favorite? That's the “Siam Horapa Coco” – a mouthful, but it's coconut ice cream with basil and galangal added. Those are ingredients that you would not expect in an ice cream, but they do an excellent job in the softly sweet coconut ice cream.
Competition on social media
A while ago we were allowed to organize a super fun giveaway on social media. The winner won a package with no less than 8 flavors of Professor Grunschnabel ice cream! The assignment? That was coming up with a new recipe… with ice cream as an ingredient, of course!
In the end, Wouter won the giveaway with his entry “mango sticky rice with banana bahiana ice cream”. That sounded nice (and especially nice Caribbean!) to our ears.
When developing the recipe, we went a little further than just mango… we turned it into a delicious pudding with different kinds of tropical fruit. Mango, banana, lime and coconut to be exact. It's almost impossible to get more Caribbean!
In addition, we have also made the idea a bit more accessible: the ketan rice (sticky rice) that you need to make the real 'sticky rice' can only be found in large Chinese tokos. We use dessert rice for this recipe – which is available at every supermarket.
This recipe makes about 6 servings.
- 1 cup Banana Bahiana ice cream from Prof. Grunschnabel
- 200 gr dessert rice
- 1 mango
- 1 banana
- The grated zest of 1 lemon
- 1 can (400 ml) coconut milk
- A bag of vanilla sugar
- 50 gr coconut blossom sugar (can also be replaced with brown sugar)
- 1 coconut
- A pinch of salt
Preparation of tropical rice pudding
Start by cooking the rice, of course. For this you take about 200 grams of dessert rice and you put this together with 300 ml of water and a pinch of salt in a large pan. When the rice has boiled for about 5 minutes, add half of the coconut milk. Now add the grated lime zest, vanilla sugar and coconut blossom sugar.
Let the rice cook for another 10 minutes. If the rice threatens to become too dry, you can pour in the rest of the coconut milk. After about 20 minutes in the rice pudding.
Now cut half of the mango and the banana into small cubes and stir them through the pudding. Then let the pudding cool completely. This is even allowed in the fridge, if you like chilled pudding better!
Open the coconut and cut a few strips of the flesh. Also cut strips/slices from the second half of the mango and banana.
To serve dessert, scoop some of the rice pudding onto a flat plate. Place two scoops of Banana Bahiana ice cream on top. Finish the plate with the coconut, banana and mango slices. A little extra coconut blossom sugar and/or sprinkles make it complete. Enjoy your meal!
