The Arepa Reina Pepiada is a corn roll that originates from Venezuela. ‘Reina Pepiada’ refers to the filling of chicken, avocado and fresh herbs. Reina means ‘queen’ in Spanish and ‘pepiada’ is the name given to beautiful ladies in Venezuela.
It is said that the name is based on the first Miss World (1955), Susana Duijm. She was not only the first Venezuelan, but even the first ‘Latina’ who won the title. In honor of her achievement, the sandwich, with this filling, was named after her.
Because ‘pepiadas’ have beautiful curves, it is of course also the intention that the sandwich is well filled up.
Basic recipe for arepas
This recipe is only for the ‘reina pepiada’ filling. You can find the basic recipe for arepas here.
INGREDIENTS (filling):
- 200 grams of chicken thigh fillets
- 1 bouillon cube (chicken)
- 2 hass avocados
- the juice of 2 limes
- 1 small onion, chopped
- 3 sprigs of fresh coriander, chopped
- 1 sprig of parsley, chopped
- 2 cloves of garlic, pressed
- 2 tablespoons of mayonnaise
- salt and pepper to taste
- optional: finely chopped Scotch Bonnet pepper
PREPARATION Arepa Reina Pepiada:
Crumble the bouillon cube in 500 ml of water and then bring it to the boil.
Then put the pieces of chicken in the broth and cook until done in about 15 minutes.
Remove the chicken from the pan and allow it to cool slightly. Then pick them apart until small wires are formed.
Now cut the onion. Cut the flesh of one of the avocados into cubes and add the lime juice. Cut the other avocado into slices and keep them (covered with plastic foil!) For later.
Mix the chicken with the avocado, chopped coriander, parsley, garlic, onion and mayonnaise. Try the filling and then add salt and pepper to taste.
Now, if you’d like some heat, add also the finely chopped Scotch Bonnet pepper.
Make the arepas according to our recipe.
Cut open the arepa’s and then fill them with the chicken filling. Cut some slices of avocado in each arepa. – Enjoy your meal!
